- Get 3/4 cup -1 cup blanched spinach leaves
- You need 2-3 tbsp boiled Fenugreek leaves - adjust
- Prepare 2 cups boiled vegetables(Broccoli, Green Peas, Beans, Capsicum)
- Get 2 tbsp Pav Bhaji Masala
- Use 1 Onion, finely chopped
- Prepare 3 tbsp Butter + additional for serving and toasting buns
- Take 2 tbsp oil
- Take to taste salt
- You need 3-4 Green tomatoes pureed
- You need 1 Boiled potato
- You need 2 tbsp ginger garlic paste
- Prepare 1 tbsp finely minced green chilli - adjust

- Provide 1 Onion finely chopped and lemon wedges for serving
Instructions to make Green Pav Bhaji:
- Grind Spinach and Fenugreek leaves to smooth paste
- Heat oil and 1 tablespoon butter in a non-stick pan. Add ginger-garlic paste and saute for 1 minute.
- Add onions and green chilli. Saute for 4-5 minutes
- Add pureed tomatoes, mix well and cook for 3-4 minutes.
- Add ground green paste and mix well
- Add boiled veggies, 1/2 cup water and mix well. Mash them slightly
- Add pav bhaji masala, salt and 2 tablespoons butter. Mix well
- Cover and cook for 5-6 minutes stirring occasionally
- Slice buns without cutting it completely, toast them with butter on hot tawa. Serve hot green pav bhaji with onions and lemon wedges
