- Keep a big vessel of water to boil. Once it boils put in the soya nuggets in it. And then boil it for 5 minutes. Close with a lid. Turn off the gas and later drain the water and keep the boiled soya separate.
- Now heat a pressure cooker. Put oil in it and add the sliced onions, chopped ginger, garlic and slit green chilies. Saute well till the raw smell goes. Keep stirring it.
- Then add the chopped tomatoes and cook it till soft. Now add the dry masala powders.
- Also, add in the washed & chopped methi leaves. Then saute it well. You start getting a nice aroma.
- Put in the washed and soaked basmati rice and fry well for five minutes.
- Then add in the measured quantity of water, salt and squeeze the lemon juice in it. Now add the boiled soya in it. Check the salt and spice level. Adjust according to your taste. Mix well.
- And then let it cook on low to medium flame without the whistle(weight). When it gets cooked, turn off the gas. Let it rest in the cooker itself for 5 minutes.
- Garnish with coriander leaves. Serve hot with any raita of your choice, or plain curd, salad, pickle and papad or some fryums as I have done here.
