  1. Use 1 medium baigan or egg plant roasted
  2. You need 3 medium size tomatoes
  3. Prepare 7-8 garlic cloves chopped
  4. You need 1 inch ginger chopped

  6. Take 1 teaspoon haldi( Turmeric) powder

Steps to make Baingan Bhaji:
  1. First of all take a medium size eggplant and roast on a gas flame and mashed it
  2. Heat 1 tablespoon musterd oil in a kadahi and add all chopped ingredients ginger,garlic,onion and green chillies
  3. Saute for 2 minutes until it get soft
  4. Now add chopped tomatoes cover with lid and cook for five minutes until tomatoes get soft
  5. Mix well and cook for two minutes than add salt
  6. Add haldi powder,red chilli powder mix well cook for one minute
  7. Than add roasted & mashed eggplant and mix well cook for one minute now add coriander leaves
  8. Mix well and off the gas. Now serve it with roties, fulkies or parathas. please try it at once.It is very tasty
