The ingredients needed to prepare Baingan Bhaji:
- Use 1 medium baigan or egg plant roasted
- You need 3 medium size tomatoes
- Prepare 7-8 garlic cloves chopped
- You need 1 inch ginger chopped

- Get 2 green chillies chopped onion

- First of all take a medium size eggplant and roast on a gas flame and mashed it
- Heat 1 tablespoon musterd oil in a kadahi and add all chopped ingredients ginger,garlic,onion and green chillies
- Saute for 2 minutes until it get soft
- Now add chopped tomatoes cover with lid and cook for five minutes until tomatoes get soft
- Mix well and cook for two minutes than add salt
- Add haldi powder,red chilli powder mix well cook for one minute
- Than add roasted & mashed eggplant and mix well cook for one minute now add coriander leaves
