The ingredients needed to prepare Lauki Bhaji:
  1. Prepare 500 gm lauki
  2. Get 1 onion
  3. Get 1 Tomato
  4. Take 1 " piece ginger
  5. You need 1 Green chilli
  6. Provide 1/4 tsp cumin seeds
  7. Take To taste salt
  8. Use 1/4 tsp red chilli powder
  9. Take 1/4 tsp turmeric powder
  10. Get 1/4 tsp garam masala
  11. Get 1/4 tsp coriander seeds powder
  12. Use 1/2 tsp Kasuri methi
  13. Use 2 tbsp chopped coriander leaves
  14. You need 2 tbsp cooking oil
  15. Prepare 1/2 bowl water
Instructions to make Lauki Bhaji:
  1. Wash peel and chop all vegetables. Chop bottlegourd in small pieces. Grate tomatoes.
  2. Heat cooking oil in a pressure cooker. Add cumin seeds and when cumin seeds splutter put finely chopped ginger and onions and saute till golden brown.
  3. Add salt, red chilli powder, coriander seeds powder, kasuri methi and turmeric powder and mix well. Grate tomatoes and add in onions and saute till oil leaves the sides.
  4. Add chopped bottlegourd and mix well. Add water and place the lid and cook till 3-4 whistles. Switch off the flame. Let pressure releases automatically
  5. When pressure releases open the lid and add garam masala and coriander leaves.
  6. Serve hot with chapatti or rice garnished with chopped coriander leaves.
