  1. Mix all the ingredients of puri section and knead it into a stiff dough.
  2. Heat little oil in a pan and add green chillies, cumin seeda and hing.
  3. Now add chopped onion, ginger-garlic paste and salt.
  4. Cook onion on medium flame until it becomes transparent.
  5. Now add tomatoes and add all the masalas.
  6. Keep cooking by continuously stirring until the tomato is completely cooked. Note: Tomato starts leaving oil is the sign it is cooked.
  7. Chop the boiled potato into big pieces or in any way it suits you. Mash 1 of the boiled potato completely
  8. Now add both the chopped and the mashed potato to the pan and mix
  9. Now add 2 cups of water and mix well.. Add little more of salt and let it to boil for about 7-8 minutes on medium flame.
  10. Till then heat oil in a pan for frying puri.
  11. Divide the dough into small parts.
  12. Roll all the parts and fry the puri when oil is hot.
  13. And it's ready to be served.
