Instructions to make Tomato Methi Rice:
- Soak 2 cups basmati rice in water for at least 1/2 an hour. Then cook in 1 1/2 cup water with salt to taste.
- Take a pan. Add ghee, ginger garlic paste, cinnamon, cloves, dry red chilli, jeera, hing, curry leaves, bay leaf, cashews, stir fry for a minute.
- Add chopped methi leaves. Stir well for a minute. Then add chopped tomatoes. Cover a lid, cook till tomatoes turn soft and mushy.
- Now add salt to taste carefully as we already added salt in cooked rice. Add turmeric powder, chilli powder, coriander powder, pav-bhaji masala, mix well.
- Add cooked rice in pan, mix well, cover the lid for couple of minutes. Turn off gas.
