- Firstly, dry roast the rava in a pan till the raw smell goes. Set it aside.
- Heat oil in a pan. Add mustard seeds and allow it to crackle. Add cumin seeds and allow it to sizzle for few seconds.
- Add green chillies, curry leaves, onions and ginger paste and saute till the onion changes its color.
- Add the vegetables ie. carrot, green peas and salt and saute for a minute.
- Add the chopped tomatoes and saute for 2 or 3 minutes till the tomatoes are soft and mushy.
- Finally, add the roasted rava. Mix well so that everything combines well.
- Add water. Once the water starts boiling, cover the pan with the lid and cook on low flame for 2 or 3 minutes.
- Rava absorbs all the water in few minutes. Stir it.
- Off the flame. Garnish with roasted, peeled and slightly crushed peanuts, coriander leaves and lemon juice. Mix well.
- Tasty Vegetable Upma is ready. Serve it hot with any chutney or simple enjoy it as it is.
