  1. Get 500 gms Gobhi
  2. Take 3 Tomatoes
  3. Take 2 Onions
  4. Get 3-4 Green Chillies
  5. Provide 1 inch Ginger
  6. Take 1 Tablespoon Ginger Garlic Paste
  7. You need Some Dhaniya Leaves
  8. Provide 1 Pinch Hing
  9. Prepare 1 Cup Besan
  10. Prepare 1 Tablespoon Desi Ghee
  11. You need 1 Big Spoon Mustard Oil
  12. Prepare For Khade Masale-
  13. Use 1 Teaspoon Khada Dhaniya
  14. Use 1/2 Teaspoon Ajwain
  15. Get 1 Teaspoon Jeera
  16. Take 1 Tej patta
  17. Provide For Spices-
  18. Use 2 teaspoons Salt
  19. Prepare 1/2 teaspoon Haldi Powder

Steps to make Gobhi Kofta Curry:
  1. Wash Gobhi properly, then grate it finely with the small hole grater.
  2. Chop Onions, 2 Green Chillies, Dhaniya Leaves very finely & grind tomatoes, 2 Green Chillies, 1 Tablespoon Ginger Garlic Paste.
  3. Now take a bowl, add finely grated Gobhi in it with 1 Teaspoon Salt, 1 Teaspoon Laal Mirch Powder, 1/2 Teaspoon Amchoor Powder, 1 Teaspoon Khada Dhaniya, 1/2 Teaspoon Ajwain, Some Dhaniya Leaves, finely chopped green chillies & 1 Cup Besan in it & mix them properly.
  4. Don’t add a single drop of water because after adding salt Gobhi will release moisture that will help them form into a mixture.
  5. Now apply 1 Tablespoon Desi Ghee on it & let the mixture rest for 10-15 minutes.
  6. After 10-15 minutes, apply some ghee or oil to your hands & make medium size Kofta balls from the mixture.
  7. Then take a kadhai, add oil in it & keep the gas on medium flame.
  8. When oil gets heated up, add Kofta mixture balls in it & fry them till they turn into golden brown in colour.
  9. Don’t stir them immediately or they will break.
  10. Stir them after 1-2 minutes when they develop a surface.
  11. When they turn into golden brown in colour, turn off the gas & take them out in a plate.
  12. Now take a kadhai, add 1 Big Spoon Mustard Oil in it & keep the gas on high flame to burn the oil first.
  13. When smoke starts coming out of Kadhai, turn off the gas & let the oil cool down a bit.
  14. After some time, again turn on the gas & keep it on medium flame.
  15. Now add 1 Teaspoon Jeera, 1 Pinch Hing, 1 Tea Patta in it & let them sizzle.
  16. When they start sizzling, add finely chopped onions in it & cook them till they turn into golden brown in colour.
  17. After 2-3 minutes, add 1/2 Teaspoon Haldi Powder in it & roast them for more 1 minute.
  18. After 1 minute, add finely grinded tomato purée in with 1 Teaspoon Salt so that they start releasing oil quickly.
  19. After 5-6 minutes, when oil is completely released, add spices mix in it & roast them for 2-3 minutes.
  20. After 2-3 minutes, add 2 Cups Water in it, mix it properly & let it boil.
  21. When it starts boiling, add 1 Teaspoon Garam Masala, 1 Teaspoon Roasted Kasuri Methi with Fried Kofta balls in it & mix them properly.
  22. Now cook them for 3-4 minutes so that Kofta absorbs gravy properly & in the end add Finely chopped dhaniya leaves in it & mix them properly.
  23. Your Gobhi Kofta Curry is ready to be served.
