Steps to make Malai kofta (in white curry):
  1. Grate paneer and boiled potatoes.
  2. Add soaked poha, salt, cardamom powder, black pepper powder and corn flour.
  3. Mash well with palm and prepare dough like form.
  4. Prepare round balls from it. Take a ball, flatten it, put 2-3 raisins and cashew nuts in the centre and seal it.
  5. Make all koftas like this.
  6. Deep fry in hot oil till golden brown. Keep aside.
  7. In a pan boil enough water and add sliced onions, cashew nuts, garlic cloves and green chillies.
  8. Cook for 5-7 minutes. Cool down and grind in mixer grinder and make smooth paste.
  9. Now in a pan heat oil and butter. Add cumin seeds.
  10. When cumin seeds change it's colour add cloves, cinnamon stick, big cardamom and green cardamom. Saute for few seconds.
  11. Add grounded onion cashew nuts paste and khoya. Saute on low flame till oil seperates.
  12. Add beaten curd and cook for sometimes.
  13. Add cream or malai and mix well.
  14. Add required water to get desired consistency.
  15. Add salt, sugar, black pepper powder and kasoori methi.
  16. Mix well, cover with lid and simmer for 4-5 minutes.
  17. Off the flame, add koftas.
  18. Delicious malai kofta is ready to serve. Enjoy with Paratha or nan.
