Steps to make Rajbhog:
  1. For making chena, add 1-liter full cream milk to the pan, and let it come to a boil.Once the milk starts boiling, turn the heat to low and start adding the acidic agent (lemon juice, vinegar, citric acid) little by little.Keep stirring until the milk is curdled and the whey (light green water) is separated from the milk completely. Turn off the heat.Now place a muslin cloth or a cotton cloth over a colander.To drain, pour the coagulated milk over the cloth and rinse well with the ice-cold water.
  2. Squeeze the excess water from the paneer and wait for 5minutes.
  3. For the stuffing–Chop all the nuts and mix everything well (nuts, cardamom powder, saffron).
  4. Now knead the paneer to make a smooth dough. It will take around 5-10 minutes. Add a pinch of yellow food colour and knead it for few more minutes. Now divide the dough into equal portions to make balls of it.
  5. Now take one ball and flatten it a bit and put some stuffing in the center and seal all edges to make a smooth ball. Repeat the process for all the chena balls.
  6. Now take a cooker and add 1/2 cup sugar with 4 cups water and let it boil till the sugar dissolves. Then add all the chena balls into the cooker and put the lid on. Let it boil on high flame. When the whistle is about to come keep the flame low for 5 minutes. Then switch off the flame and release the pressure from the cooker (do not open it until it cools down properly). When the cooker gets cool down then open the lid and take out all the rajbhog's.
  7. Now add remaining sugar and water in the same cooker and make the sugar syrup. When the sugar dissolves add cardamom powder, saffron and yellow food colour. Let it boil for 5 minutes. Don't make the sugar syrup too thick. We just need a sticky consistency of the sugar syrup. Allow it to cool down properly.
  8. Now squeeze the excess water from the rajbhog and dip it into the sugar syrup. Do the same for all the rajbhog. After adding all the rajbhog into the sugar syrup. Let it sit for half an hour at the room temperature. Then refrigerate it and serve it cold. Garnish it with some chopped nuts
