Instructions to make Punjabi chole bhatura:
- Soak the chickpeas in water overnight. The next day put the chickpeas with water in a pressure cooker, tea bag and 2 to 3 dry amla and cook it over medium flame after 30 mins turn off the flame but don't open the lid.
- Heat a pan over low flame and pour some oil in it. Add cumin seeds, chopped onion and saute for few min. Put ginger garlic paste, chopped tomato and tomato puree in it. Fry them until they turn golden brown. Now, add turmeric powder, Coriander powder and chole masala.
- Cook for few mins and then add chickpeas add a little water. Put the flame to medium setting and cook everything well. Take out in a serving bowl. And garnish with Coriander leaves and paneer cubes.
- Bhature:Take a large bowl and mix refined add all purpose flour in it. Put salt curd, oil and knead a dough using water. Once a dough ready keep it covered for 15 mins. Place a kadhai over medium flame and fill half with oil. In the meantime make bhaturas out of the dough put each at a time in the oil. Fry the bhaturas until they are puffy. Serve with cholas.
