  1. Use 1 Cup Kabuli Chana Soaked Overnight
  2. Take 2 tbsp Garlic
  3. Provide 1 Tsp Garlic Paste
  4. You need 1/2 Tsp Red Chilli
  5. You need 2 Tea Bags
  6. Provide 1 Tbsp Ginger Finely Chopped
  7. Provide 1 Green Chilli Sliced
  8. Prepare 1 Onion Chopped
  9. Prepare 3/4 Cup Tomato Puree
  10. Take to taste Salt
  11. You need 1/4 Tsp Turmeric Powder
  12. Use 1 Tbsp Coriander Powder
  13. Use 2 Tbsp Chana Masala
  14. Get 2 Tbsp Oil
  15. Get 1 Tsp Cumin Seeds
  16. Provide to taste Whole Spices
  17. Prepare 1 Bay Leaf
  18. Get 1 Cinnamon Stick
  19. Provide 2-3 Cloves
  20. Take 1 Star Aniss
  21. Provide 2 Black Cardamom Pods
  22. Get 1/2 Tsp Cumin Seeds
Instructions to make Chole:
  1. Pressure cook the Kabuli chana with the tea bags, water, salt, garlic cloves and whole spices for 4 whistles on high heat. Turn the heat to medium and pressure cook for about 15 minutes or until they are soft. Let the pressure come off. Discard the spices and tea bags and keep aside.
  2. Discard the tea bag. Heat 2 tbsp oil in a pan, add the cumin seeds and turmeric powder. When the seeds crackle, add ginger and sauté for a minute. Add onions and garlic paste and sauté till the onion is golden brown, cook for 2 minutes. Add tomato puree and mix well. Add coriander powder, red chillie powder, chana masala, and green chilies. Mix well and cook for 5-6 minutes.
  3. Add tomato, masala to the cooked chickpeas chana and mix well. Add some water if needed. Cook covered over low heat for 7-8 minutes. Turn off the heat and serve with Bhature, Puree or Rice.
