The ingredients needed to cook Chanar Paturi:
- Provide 300 grams chanaa
- Take 1/2 cup grated coconut
- Provide 3 tablespoons mustard seed paste
- Get 3 tablespoons plain yoghurt
- Prepare 1 teaspoon sugar
- Prepare 3-4 slitted green chilli
- Provide 2 tablespoon mustard oil
- Get to taste Salt
- Get 1-2 whole banana leaf
Instructions to make Chanar Paturi:
- Grind black mustard seeds with two green chillies to a smooth paste in a mixer.
- In a bowl mash paneer/chana until lump free.
- Add in mustard-chilli paste,grated coconut,salt,sugar,plain yoghurt and mustard oil.Mix them well and keep aside.
- Heat the banana leaf sheets from one edge to another (glossy side down)over low flame for a seconds.This will help it to become more pliable so that it can be easily folded without breaking.
- Now place some of the paneer mix in the centre along with a chilli and fold them to make it a square parcel.
- Tie with thread that the parcel will not open while cooking and keep them aside.Repeat this process with rest of the cottage cheese/chana mix.
- Now heat a non-stick tawa,grease it with some mustard oil and place all the folded banana leaf parcels.
- Cover and cook for 6-7 minutes in a low flame.
- Carefully flip them over and cook the other side for 5-6 minutes or till done.
- Serve the chana or cottage cheese paturi with hot steamed rice.
