- Get 1 cup chickpeas (soaked overnight)
- Prepare 1 tea bag
- You need 1 inch cinnamon

Instructions to make Chole masala:
- Drain the water from chickpeas and wash it well
- Add to a pressure cooker along with 1½ cup water. Add a teabag and pressure cook until soft for 5 to 6 whistle on a medium heat.
- Add oil to a hot pan, add cinnamon, clove, cardamom and bay leaf. Roast it.
- Now add ginger garlic paste and roast it until raw smell goes off.
- Add chopped onion and green chilli. Roast it until golden brown
- Add tomatoes, turmeric powder and salt. Cook until the mixture turns mushy and soft.
- Add chole masala powder, garam masala powder, coriander powder and red chilli powder.fry them 1 to 2 minutes until oil separates.
- Add chole with stock and 1 cup water or as needed.. mix it nicely.
- Cover and cook on low flame for 18 to 20 minutes until the chole absorb the flavour of masala.
- Add kasuri methi and off the flame and cover it for 2 minutes
- Heat ghee in a small pan.. fry ginger and green chillies until smells aromat. Pour it on chole.
- Sprinkle some coriander leaves and serve it with rice, Puri or bhatura
