The ingredients needed to prepare Mutton Kuzhambu Mutton Curry:
- Use 1/2 kg Mutton pieces
- Provide 2 tsp Ginger garlic paste
- Prepare 1 tsp Castor Oil
- You need 3 tsp Sesame Oil
- You need 15 Shallots roughly chopped
- Use 1 Small Tomato roughly chopped
- Get 1/4 cup Grated Coconut
- Take 3 tsp coriander seeds
- Get 2 Cloves
- Provide 1/2 inch cinnamon stick
- Use 1/2 tsp Fennel seeds
- Get 1/2 tsp Cumin seeds
- Prepare 5 Pepper corns
- You need 5 Dry Red Chillies
- You need 1 tsp Curry leaves
- You need 1 Green Chilli
- Provide 1 tsp Turmeric powder
- Get 2 tsp Coriander leaves
- You need to taste Rock Salt
- Get As needed Water
- Provide For Tempering
- Prepare 2 tsp Coconut Oil
- Get 1/2 tsp Mustard seeds
- Use 5 Shallots roughly chopped
- Get 2 tsp Curry leaves
Steps to make Mutton Kuzhambu Mutton Curry:
- Clean and wash the mutton pieces.
- Place a pressure cooker in the stove. Switch on the flame. Add the mutton pieces, 1/2 tsp Turmeric powder, castor oil, ginger garlic paste and some water. Mix well. Leave for 1 whistle in high flame and keep in medium low flame. Let it cook for 20 minutes.
- Once the pressure goes off, open the cooker lid.
- Place a sautepan in the stove. Switch on the flame. Keep in medium flame.
- Add 1 tsp Sesame Oil, coriander seeds, cloves, cinnamon, fennel seeds,curry leaves few, red chillies, cumin seeds and peppercorns. Roast till it turns light brown colour. Transfer to a bowl.
- Then in the same pan, add another 2 tsp Sesame Oil and shallots. Keep in medium flame and saute till it becomes translucent. Add tomato and saute for 5 mins. Atlast add grated coconut and saute well for a minute. Transfer to a bowl.
- Cool all the fried items completely. In a mixie, add the first items which we have roasted. Grind to a fine powder.
- Along with that powder, add the onions and coconut in the mixie. And add 1/2 tsp turmeric powder and green chilli. Grind to smooth paste by adding water gradually.
- In a currypan, add the masala paste, cooked mutton along with that water and salt. Again add required water for it to cook. Cover and cook for 15 to 20 mins.
- In tadka pan add the ingredients given for tempering. Fry till shallots becomes translucent.
- Then add it to the mutton curry. Mix well and transfer to a bowl. Garnish with coriander leaves.
- Now it's ready to serve with hot rice, idli and dosa.
