  1. Prepare 500 grams mutton with bones, cubed
  2. Take 1-2 potatoes, boiled
  3. Use 3 tbsp. mustard oil
  4. Prepare 2 dry red chilies

  6. Take 1" cinnamon stick
  7. Take 2-3 cardamoms
  8. Use 4-5 cloves
  9. Provide 1/2 tsp. whole peppercorns

  11. You need 1/2 tsp. fennel seeds
  12. Use 1 onion, chopped
  13. Get 1 tbsp. ginger-garlic paste
  14. Get 1 tomato, chopped
  15. You need 1/2 tsp. turmeric powder
  16. Take to taste salt
  17. Use 1 tsp. red chilli powder
  18. You need 1 tbsp. roasted coriander-cumin powder
  19. Prepare 1 tsp. garam masala powder
  20. Provide 1/4 cup coconut milk
  21. Take 3 tbsp. coriander leaves, chopped
  22. Take 1/4 cup yoghurt
Instructions to make Railway Mutton Curry:
  1. Pressure cook the mutton with salt to taste and 1 cup water for 20 minutes on a low flame after the first whistle or till done. Keep aside.
  2. Heat oil in a pan and fry the boiled potatoes till golden in colour. Keep aside. Mix the ginger-garlic paste and all the dry spices with 1/4 cup water. Keep aside.
  3. Temper the same oil with dry red chilies, bay leaves, cinnamon, cardamoms, cloves, peppercorns, cumin seeds and fennel seeds. Saute for a few seconds.
  4. Add the onion and stir fry till light brown.
  5. Add the spice paste & fry till the oil separates.
  6. Add the tomatoes and cook till it is nicely mashed.
  7. Add the boiled mutton & the stock. Simmer on a low flame for 4-5 minutes.
  8. Add the fried potatoes & coriander leaves. Simmer further for 2 minutes.
  9. Now add the yoghurt and coconut milk. Mix well and cook for 1-2 minutes.
  10. Serve with poori, paratha, chapati, pulao or plain biryani.
