- You need 100 g vegetable oil
- Get Salt
Instructions to make Ugali, Murenda and Eggs:
- Mix the leaves of Murenda and Cow pea leaves in one pot
- Add 200 g of water and a pinch of sizeable salt in the mixture, cover it and mount it on moderate flame.
- After 20 minutes stir it gently to mix. Let it boil for another 10 minutes then turn off the flame.
- Change the mixture to an empty bowl.
- Mount the same pot used for continuity of natural super aroma and turn on flame to moderate level.
- Pour approximately 20-30 g of vegetable oil on the pot
- Add a half of well sliced onion on the pot and mix gently until it attains Gold colour.
- Add one well sliced tomato on the pot and keep stirring gently until the source is thick for approximately 3 minutes
- Gently add the mixture from the bowl and stir to make the mixture integrate very well. Reduce the flame to allow steam cooking.
- Cover the pot and let the mixture boil for around 10 minutes
- Uncover the lid and add 250 ml of fresh milk. Stir again(Using wooden spoon) for the milk to distribute evenly in the mixture.
- Add Half table spoon of Turmeric powder in the mixture and stir vigorously to blend well.
- Cover the pot with the lid and keep the flame low. Let the mixture boil for 10 minutes.
- Pour 300 ml of fresh water and 500 ml of sour milk on another pot, mount it on another flame and let it boil.
- When 100 degrees boiled, pour flour gently as you vigorously turn the mixture using a wooden cooking stick.
- Repeat the above process until the mixture is moderate hard and no trace of unmixed flour is visible. This should be done for a period of between 7 - 12 minutes.
- When certain with the mixture, make it stick together then put it on the plate and cover it with the same pot to keep warm.
- Using a pan, pour the remaining 70-80 g of vegetable oil and let it fry on moderate flame.
- Mean while chop Coriander leaves and let it be ready for use.
- Add the remaining chopped onions on the pot and stir to attain Gold colour
- Smash the four eggs on a bowl, add salt and mix it thoroughly to blend.
- Add The remaining chopped tomatoes after ascertaining that the onions have attained Gold colour. Stir to mix for approximately one minute.
- Add Corriander leaves and continue stirring for approximately 30 seconds.
- Add the remaining half table spoon of Turmeric powder and mix gently for another 30 seconds
- Pour the mixture of eggs evenly on the pot and let it sink slowly in the existing mixture. You can use a big spoon to turn the eggs with mixture to ensure both sides of the eggs layers get contact with the pan and mixture.
- This process should take approximately 2 minutes and then you are ready to serve.
