The ingredients needed to cook Idlis:
  1. Get 3 cups idli rice
  2. Take 3/4 cup White Lentil (Urad Dal)
  3. Get 3 tsp chickpeas split (chana dal)
  4. Use 1/2 tsp Fenugreek (methi) seeds
  5. Take 1 cup curd
  6. Take 1 tsp Baking soda
  7. Prepare 1 tsp red chilli powder
  8. Take 1 tsp Black pepper powder

Instructions to make Idlis:
  1. Mix rice, white lentil, chickpeas split, Fenugreek seeds in a bowl. Wash it properly. Soak it for 5-6 hrs.
  2. Strain water from the rice mix. Now take a grinder add Rice mix half curd. Churn it, add remaining curd, mix it, churn it again. We need not too smooth not more corse batter.
  3. Take it out in a mixing bowl. Add salt and whisk it properly for 5-10 min. And keep a side for hr.
  4. When we need to make idlis. Take steamer add water, keep it on medium flame. Grease the idli plates.
  5. Don't put baking soda at once in whole batter. Take another bowl as much as u want the batter take add required baking soda add little water on soda. Whisk it properly. Will get smooth fluffy batter.
  6. Now add batter to the idli plates. Sprinkle cumin seeds, pepper powder, red chilli powder on the batter. Put the plates in the steamer. Close the lid. Steam it for 10 min.
  7. Check the idlis. Take out the plate and place another plate to the steamer. The plate we have taken out let it get little cool. So that u can take out idlis properly. With the help of knife or spoon take out idlis.
  8. Serve hot idlis with hot Sambhar and coconut Chutney
