The ingredients needed to cook Ragi Idli:
  1. Provide 1 cup ragi flour
  2. Provide 1/4 cup brown rice, soaked overnight
  3. Take 1/2 cup urad dal (split black gram lentil), soaked overnight
  4. Take 1 tsp. red chilli flakes
  5. Prepare to taste salt
  6. Use 1 tsp. eno fruit salt
  7. Use coconut chutney & sambar to serve
Steps to make Ragi Idli:
  1. Grind the rice and dal with required quantity of water into a smooth paste. Add the ragi flour, red chilli flakes and salt.
  2. Leave aside overnight to ferment. Just before preparing, add the eno fruit salt and give it a mix.
  3. Pour in greased idli moulds and steam for 15-17 minutes (5 minutes on high flame and the remainder on low flame).
  4. When cool enough to handle, demould it and serve them with coconut chutney and sambar.
