- Cut the eggplant into thin slice.
- In a bowl Add sliced banana, 3/4tsp chilli powder, turmeric powder, jeera powder and salt and mix well.
- Blend the curd with salt and hing and keep aside.
- Heat oil in a pan and deep fry the sliced eggplant and keep it aside.
- Again heat oil and add phutana, green chilies, red chilli and curry leaves and saute for a minute.
- Now add fried eggplant and mix well.
