The ingredients needed to prepare Dahi Baingan:
  1. Prepare 4 medium size Brinjal
  2. Use half litre curd
  3. Get as per taste salt
  4. Get little sugar
  5. You need oil
  6. You need little jeera
  7. You need 1 red chilli
  8. You need 1 spoon grated ginger
  9. You need 1 spoon green chili chopped
  10. Take panch furan (cumin, mustard, red chilli,fenugreek seeds and methi)

  12. Use 10 to 12 curry leaves
Instructions to make Dahi Baingan:
  1. Cut brinjals into diced pieces. Wash them and add salt and leave it for two minutes.
  2. Roast the jeera (cumin) and red chilli dry in a pan. Crush it and make powder.
  3. Fry brinjals in deep oil, soak it in a tissue paper.Cool it.
  4. Beat curd, add little sugar and salt. Add ginger and green chilli. You can add little water to maintain curd's consistency if needed.
  5. Add little oil in pan and add panch puran, curry leaves add little water. Cool this tadka and keep aside.
  6. Add brinjals and tadka. Add that powder, mix well.
  7. Delicious Dahi Baingan is ready.
