  2. Prepare 3 Tomatoes
  3. Take 2-3 Medium Sized Onions or 6 Small Size Onions

  6. Prepare 1/4 Cup Dahi
  7. You need 2 Tablespoons Ginger Garlic Paste
  8. You need 3 Tablespoons Besan
  9. Provide 1/4 Cup Desi Ghee
  10. Take 2-3 Tablespoon Refined Oil
  11. You need For Khade Masale:
  12. Use 2 Dried Red Chillies
  13. Use 4 Choti Elaichi
  14. Take 4 Laung
  15. Use 2-3 Sabut Kaali Mirch
  16. Get 1 Badi Elaichi
  17. Take 1 Tej Patta
  18. Get For Spices:
  19. Prepare 1.5 Teaspoons Haldi Powder
  20. Provide 1 Teaspoon Chaat Masala
  21. Provide 5 Teaspoons Dhaniya Powder
  22. Use 2 tbsp Dhaniya Powder
  23. Use 1.5 Teaspoon Laal Mirch Powder
  24. Use 3/4 Teaspoon Roasted Jeera Powder
  25. Get 1 Teaspoon Kashmiri Laal Mirch Powder
  26. Prepare 1 Teaspoon Garam Masala
  27. Prepare 1 Teaspoon Roasted Kasuri Methi
Steps to make Changezi Paneer:
  1. Chop Onions very-very finely.
  2. Grind Tomatoes, Green Chillies finely into purée in a mixer grinder.
  3. Cut Paneer into cubes & keep them at room temperature for 30 minutes.
  4. Now take a bowl, add chopped paneer cubes in it with 1 Table Spoon Ginger Garlic Paste, 1 Teaspoon Haldi Powder, 1/2 Teaspoon Laal Mirch Powder, 1 Teaspoon Chaat Masala, 2 Table Spoon Oil, 1/4 Cup or 2 Table Spoon Dahi & 3 Table Spoon Besan in it & mix them properly but carefully so that paneer cubes doesn’t break.
  5. Now let the marination rest for 10-15 minutes.
  6. Meanwhile, take a kadhai, add 1/4 Cup Desi Ghee in it with 2 Table Spoon Oil & keep the gas on medium flame.
  7. When ghee gets heated up, add Khade Masale in it & let them sizzle.
  8. When they start sizzling, add finely chopped onions in it & roast them till they turn into golden brown in colour.
  9. After 2-3 minutes, when they are 60-80% cooked, add 1/2 Teaspoon Haldi Powder, 1 Table Spoon Ginger Garlic Paste in it & cook them for 1 minute.
  10. Now Lower the flame & add 1/2 Cup Dahi in it & start stirring it immediately so that it doesn’t get burned.
  11. After 2 minutes, add finely grinded tomato purée in it with 1 Teaspoon Salt so that they start releasing oil quickly.
  12. After 10-15 minutes, take a kadhai, add 2-3 Table Spoon Oil in it & keep the gas on medium flame.
  13. Now roast all paneer cubes one by one till they develop a crust on their surface & then take them out in a bowl.
  14. Now after 5-6 minutes, when oil is completely released, add 5 Teaspoon Dhaniya Powder, 1 Teaspoon Laal Mirch Powder, 2 Teaspoon Kashmiri Laal Mirch Powder in it & roast them for 2-3 minutes.
  15. Roast masalas well.
  16. After 2-3 minutes, add 1 Teaspoon Garam Masala, 1 Teaspoon, Roasted Kasuri Methi, 3/4 Teaspoon Roasted Jeera Powder, Roasted Paneer cubes with some water in it & mix them properly.
  17. Cook them for 2-3 minutes on medium flame.
  18. Your Changezi Paneer is ready to be served.
