The ingredients needed to cook Mat Samosa or Chatai Samosa:
- Provide For dough making
- Get 1 cup maida
- You need Half tsp baking powder
- Use Water as per requirement
- Take 4 tbsp Oil :
- Prepare Ajwain
- Provide For filling
- Use 1 medium size potato
- Take Boiled green peas, u cn also use the frozen one
- Take Few pieces of capsicum
- Get 1 small onion cut into small pieces
- Take 4-5 garlic pods
- Prepare Mustard seeds/rai for splutering
- Provide 1 pinch Hing
- You need 1 pinch sugar to taste
- Provide Green chillies as per ur taste
- Prepare leaves Curry leaves, corriender
- Prepare Turmeric, salt, sugar as per tasre
Steps to make Mat Samosa or Chatai Samosa:
- For dough making, mix all the dry ingredients and add oil in it so that it takes the shape as is mentioned below in the second pic. Now add water as required to form a soft dough and brush some oil over the dough and cover it with a damp cloth and rest it for 30 mins.
- For filling, take a kadhai, add 2 to 3 tbsp oil in it, splutter sum musterd seeds. Now add curry leaves, a pinch of hing, small pieces of capsicum, onion pieces green chillies and crushed garlic a pinch of sugar and salt to taste. Fry it till it becomes golden in colour..donot fry them completely. Now add the mashed potato and green peas and cover it and cook it in a low flame till 5 to 7 mins. Now add sum corriender leaves and again give it a mix.
- Now remove the dough and make 3 equal balls out of the dough. Roll the dough very thin to form a square shape. Cut the sides so that it forms a rectangular shape. Now cut into 2 halves vertically. Now put the 2 pieces over one another so that it becomes a "plus" in shape. Now place the filling in between properly as shown in pic 2 and press it gently.
- Apply little water on the edges. Now fold from down part and another from the adjacent side. Remember donot fold the upper side. Seal the edges properly so dat it doesn't opens up. Now cut the sides into 5 equal parts as shown in the image below. And fold the strands in an alternate way. It will finally look like in the second pic. Seal all the strands with wet finger so that they doesn't opens up while frying them in oil.
- Now heat the oil in a pan for frying. Once the oil is hot lower it and fry them till golden brown and crispy. Fry them min. till 5 to 7 mins in a low flame and you are ready to serve. Serve it with any dip or sauce of your choice
