The ingredients needed to make Vegetable Kurma:
- Use 1/2 cup Butter beans
- Provide 1/2 cup Carrot
- Get 1/2 cup green peas
- Take 1 medium sized potato
- Prepare 1 medium sized onion
- Get 1 medium sized Tomato
- You need 1 tsp Ginger-Garlic paste

- Provide 1/2 Coconut (Scrapped)
- Provide 8-9 Cashew nuts
- Get 8-9 Shallot Onion
- Provide 6-7 Garlic
- Get 1 tbsp Green chillies (Crushed)
- Provide For Masala:
- Take 1 tbsp Coriander seeds
- Get 1 tbsp jeera powder
- Provide 3/4 tbsp Fennel seeds
- Get 4-5 cloves
- Take 5-6 pepper
- Provide 1 stick cinnamon
Instructions to make Vegetable Kurma:
- Take a pan add oil, once oil is hot, add Shallot Onion, garlic and cashews. Add some coconut in that. Let it cool.
- Take another pan, put masala in that and dry roast it.
- Now in onion add rest of the Coconut and dry roasted masala.
- Grind it together with some water and make a gravy.
- Cut all vegetables into small pieces. Boil Butter beans, carrot, potato and green peas together. Keep chopped onion and tomato separate.
- Take a pan, add oil. Once oil is hot, add bay leaf in that. Add chopped onion and saute for some time. Once onion is cooked add ginger garlic paste. Cook for some time, now add tomatoes in that.
- Now add turmeric powder, crushed green chillies. Cook for some time. Add boiled vegetables. Add salt. Let it boil for some time.
- Now add coconut gravy in this. Mix it well. Don't boil it. Off the gas and serve hot with Ghee Rice or Paratha.
