Steps to make Veg kolhapuri:
- Take a pressure cooker and put chopped vegetables like potatoes, beans, capsicum, carrot along with salt and boil it.
- Take a pan and dry roast sesame seeds, cloves, poppy seeds, black pepper, dry coconut, coriander seeds, cinnamon, cardamom, and cumin seeds.
- Once its come in room temperatures then add red chilli powder and blend it with mixture till smooth powder.
- For gravy : take a pan, add oil and chopped garlic, ginger, onion and tomatoes and mix it well. Once it comes into room temperature then blend it in mixture.
- Take a pan add butter, asafoetida and add the gravy. And cook it. Till it separates the butter.
