Steps to make Paneer Lifafa:
  1. Prep for gravy - blend birista- yogurt into fine paste and keep aside. Similarly chop and blend the tomatoes and keep aside. In a vessel, boil whole dried red chilli, cashewsnuts and water. Boil and simmer for 10 mins. Let cool, remove chilli stems and blend in smooth paste.
  2. Gravy - to a pan, add oil. Once hot add black cardamom, cloves, star anise, fennel seed and kasuri methi. Then add in the birista-yogurt paste, cook for sometime, add red chilli powder, coriander powder, turmeric powder, mix and cook for 2-3 mins. Put in the tomatoe paste, mix and add salt. Cover and cook for 5-6 mins. Add in the cashewsnuts and chilli paste. Stir and cook for another 4 mins. Add 2 cups water and bring to a boil. Turn off the gas and strain the gravy.
  3. To make lifafa - in a pan oil, green chilli, cashewsnuts, raisins, cook for few seconds. Add in the chopped veggies and again cook for couple of mins. Now with a masher, mash the veggies. Add a splash of water. Cook for 2-3 mins. Season it with red chilli powder, salt, sugar, garam masala. Mix and cook well. Then and the coriander leaves and anardana. Off the gas.
  4. Filling is ready - take the paneer slices and fill it with the filling made. Now grill it. For grilling the paneer slices, heat butter, add coriander leaves chilli flakes. Now place the paneer lifafa on the grill pan and roast it on both sides. Now in a serving plate place the lifafa and pour the gravy and garnish with cream and coriander.
