The ingredients needed to prepare Shahi Paneer:
- You need 8-10 Tomatoes (600gms-1Kg Tomatoes)
- Prepare 1 Onion
- Use 1 inch Ginger
- Take 4-5 Garlic Cloves
- You need 1 Tablespoon Ginger Garlic Paste
- You need 3 Green Chillies
- Provide 4 Table Spoon Milk
- Use 12 Kaju/ Cashews
- Prepare as required Or Melon Seeds or almonds
- Get 400 gms Paneer
- You need 1/2 Tea Spoon Sugar
- You need 50 gms Butter
- You need 2 Table Spoon Desi Ghee
- Prepare 1 Tea Spoon Honey
- You need 1 Lemon Juice
- Take Khade Masale
- Get 3 Choti Elaichi
- You need 2 Badi Elaichi
- Take 5 Laung
- Get 3 Black Pepper/ Sabut Kaali Mirch
- Use 1 Daal Chinni
- Use 1 Tej Patta
- Provide Spices
- Use 2 Tea Spoon Salt
- Get 1/2 Tea Spoon Haldi Powder
- Use 1 Tea Spoon Dhaniya Powder
- Take 1/2 Tea Spoon Roasted Jeera Powder
- Use 2 Tea Spoon Kashmiri Laal Mirch Powder
- You need 1 Tea Spoon Laal Mirch Powder
- Use 1 Tea Spoon Roasted Besan
- You need 1 Tea Spoon Garam Masala
- Prepare 1 Tea Spoon Roasted Kasuri Methi
Steps to make Shahi Paneer:
- Chop Tomatoes, Onion, Green Chillies, Ginger & Garlic Cloves roughly.
- Cut Paneer into cubes or whatever shape you want & keep them at room temperature for 30 minutes.
- Now take a pressure cooker, add 2 Table Spoon Desi Ghee in it & keep the gas on medium flame.
- When oil gets heated up, add Khade masale in it & let them sizzle.
- When they start sizzling, add roughly chopped onion, garlic cloves, Ginger, green chillies & 12 Kaju pieces in it & cook them till they become translucent/ soft.
- After 2-3 minutes, add roughly chopped tomatoes with ample amount of water, 1 Teaspoon Salt, 1/2 Teaspoon Sugar & mix them properly.
- Now close the lid & give 5 whistles on medium-low flame.
- After 5 whistles, turn off the flame & let the pressure cooker depressurise naturally.
- After some time open the lid & add 1 Lemon Juice in it to make the gravy sour.
- Now with the help of blender grind it finely into purée.
- If you want to use mixer grinder, let the mixture cool down properly & then grind it finely into purée in a mixer grinder.
- Now strain purée twice so that no mixture Patrice is left in the gravy.
- Then take a kadhai, add 2-3 Table Spoon Oil in it & keep the gas on medium flame.
- When oil gets heated up, lower the flame & add spices mix in it & roast them for 2-3 minutes.
- After 2-3 minutes, add finely grinded & strained purée in it with 4 Table Spoon Milk in it, mix them properly & let it boil.
- When first boil comes up, add 1 Teaspoon Honey in it & mix them properly.
- Then turn off the gas & let the gravy cool down for 30 minutes.
- This process will make gravy more smooth & thick.
- After 30 minutes, turn on the gas & keep it on medium flame.
- Then add paneer cubes with 1 Teaspoon Garam Masala, 1 Teaspoon Roasted Kasuri Methi & 50gms Butter in it & mix them properly.
- Cook them for 4-5 minutes on medium flame.
- Your Shahi Paneer is ready to be served.
