Steps to make Koraishuti'r kochori,niramish notun aloo'r dum (Bengali style):
- For Koraishuti'r kochori: Mix salt,sugar and oil maida and mash it with your hand and then add water to make smooth dough,cover it and keep it aside.
- Boil the green peas in water for approximately 3 minutes.
- Then strain it and grind it with salt, sugar and make a paste.
- Heat oil in a pan and then add the kalo jeera and ginger chilli paste along with coriander and cumin powder and saute it for a while and then add the green peas paste in it.
- Saute it for sometime till it becomes dry and keep them aside.
- Make equal size balls of the dough and also make equal sized balls of green peas masala paste.
- Then put the green peas inside the dough ball.
- Grease the rolling pin with oil and roll them as puri and then dip fry in oil. Now the Koraishuti'r kochori are ready.
- For Niramish notun aloo'r dum: Boil the potatoes with little salt.
- Peel them and sprinkle some salt in it and keep them aside.
- Make a paste of curd and cashew nuts.
- Heat a pan and add cumin seeds, dry red chilli along without whole spices.
- Saute it for sometime and then add the ginger chilli paste along with coriander,cumin,chilli, turmeric powder and salt in it.
- Then add the cashew and curd pastern Iran's saute it for sometime and then add the potatoes and mix it well. Add sugar in it.
- Cover the lid and cook it for 10 minutes in low flame.
- Mix Garam masala powder in it and cook another 5 minutes by adding water in it.
- When it becomes little thick then switch off the flame and add ghee in it and sprinkle some coriander leaves in it.
- Now the niramish notun aloo'r dum is ready to serve.
- Serve hot with Koraishuti'r kochori.
