  1. You need 300 gm spiny gourd
  2. Use 1 Large Onion finely chopped
  3. Prepare 1 -Tomato finely chopped
  4. Take 1 tsp Turmeric powder
  5. Get 1 tsp Kashmiri red chilli powder
  6. Get 1 tsp Green chilli paste
  7. Get 1 tsp Ginger, garlic paste
  8. Prepare 1/2 tsp Garam masala powder
  9. Use 1 tsp Coriander powder
  10. Prepare 1 tsp Cumin powder
  11. Take 1 tbsp Curd
  12. Get 1 tsp Ghee
  13. Provide 2 tbsp Mustard oil
  14. Use 1/2 tsp Cumin seeds
  15. Get 2 Cardamom
  16. Prepare 2 Bay leaves
  17. Provide 1 Cinnamon
  18. Take 2 Cloves

Instructions to make Kakrol Kalia (Spicy spine gourd curry):
  1. Peel the kakrol and make small slit on it. Then rinse them thoroughly. Marinate all kakrols with salt and turmeric powder. Preheat pan and add 1tbls oil into it. When oil gets hot then fry kakrol until light brown.
  2. After frying remove them from oil and add another 1tbls oil in same pan. When oil gets hot add cumin seeds, bay leaf, clove, cardamoms and cinnamon. After few seconds then add chopped onions and fry them until golden brown.
  3. Next add chopped tomatoes and sauté them for 2minutes. Then add ginger-garlic paste and fry them. After few minutes add green chilli paste, coriander powder, cumin powder, Kashmiri red chilli powder and salt.
  4. Now add 2 tsp water and and fry all masala very well until oil separated. Then add fried kakrol and saute the kakrol for 2-3 minutes. Stir nicely until kakrol get coated with spices. Then add whipped curd and mix it well.
  5. Mix curd very well. After few minutes add one and half cupwarm water, two green chillies and cover it with a lid with a medium flame. After five minutes add 1tsp ghee, half tspn sugar and garam mashala powder and cook for another 2minutes and then switch off the flame. Kalkrol kalia is ready to serve with hot rice or roti.
