The ingredients needed to make Spicy Mutton Masala:
  1. Use 500 gm mutton with bones
  2. Get 2-3 onions, chopped
  3. Prepare 1 tbsp ginger-garlic paste
  4. Prepare 1 tomato, pureed
  5. You need to taste salt
  6. Get 3-4 tbsp oil
  7. Use 1 sprig curry leaves
  8. Use 1 tsp coriander leaves

  10. Get 2 tbsp coriander seeds
  11. Get 1 tsp cumin seeds
  12. Provide 8-10 dry red chilies
  13. You need 2 tbsp fresh grated coconut
  14. Prepare 1 tsp sesame seeds
  15. Take 2-3 green cardamoms
  16. Provide 1 " cinnamon
  17. Prepare 5-6 cloves
  18. Take 1/2 star anise
  19. Take 1/2 mace
  20. Use 1/2 tsp. peppercorns
  21. Prepare 1 tsp. fennel seeds
  22. Get pinch fenugreek seeds
Steps to make Spicy Mutton Masala:
  1. Boil the mutton in 1 cup water for 20-25 minutes on a low flame after the first whistle. Drain the stock and keep the mutton pieces separately.
  2. Heat oil in a pan / kadai and saute the onions till light brown. Add the ginger-garlic paste and tomato puree. Fry till the oil separates.
  3. Now add the ground spice paste and saute well for a while.
  4. Add the boiled mutton, salt and curry leaves. Mix everything well and add 1/2 cup water.
  5. Cover & simmer on a low flame till you get a thick gravy consistency. Switch off the flame. Garnish with coriander leaves.
  6. Serve as a side dish with plain steamed rice, jeera rice, pulao, plain biryani, naan, tandoori roti, rumali roti or just plain chapati. It also goes well with dosa, appam and idiyappam.
