The ingredients needed to prepare Avial Aviyal:
- Provide 1 cup chopped pumpkin
- You need 1 cup chopped ash gourd
- Take 1 cup chopped ridge gourd
- Use 1 cup chopped bottle guard
- Take 1 cup chopped carrots
- Get 1 cup chopped radish
- You need 1 cup chopped french beans
- Provide 1 cup chopped elephant yam
- Get 1 cup chopped raw banana
- Take 1 cup chopped brinjal
- Get 1 cup chopped drumsticks
- You need 1/2 cup milk
- Take to taste salt
- Use 1 cup water
- Prepare 1 tsp turmeric powder
- Take for coconut paste
- Prepare 1 cup fresh grated coconut
- Get 2 green chillies
- Use 1 tsp cumin seeds
- Prepare 1 cup yoghurt
- You need tempering
- Prepare 1/4 tsp asafoetida
- You need 12 curry leaves
- Get 2 tbsp coconut oil
- Take 2 dry red chillies
Instructions to make Avial Aviyal:
- Rinse & drain water from the veggies.
- In a grinder, add cumin seeds,yoghurt & green chilli & grind it.
- Half cook the veggies in a pressure cooker. Cook the veggies separately(which takes less/more time to cook).
- Once the veggies are cooked, in a wok/kadhai add all the boiled veggies & salt to it.
- Then add the coconut paste to it. Mix gently. Add turmeric powder, and milk. Mix it well.
- Add a little water if required & stir the veggies well. Let the veggies cook.
- In another pan, heat coconut oil and add dry red chillies, asafoetida & curry leaves for tempering. Once the tempering is done, pour it over the curry and mix it well.
- Serve it hot with hot rice.
