  2. Get 1 cup Basmati rice

  18. Take 100 gms paneer, cut in small cubes
  19. Prepare 1/2 cup curd

  24. Provide 2 tomatoes, chopped
  25. Take 1 big onion, chopped
  26. Get 1/2 tsp turmeric
  27. Prepare 1 tbsp cumin-coriander powder
  28. Use 1 tbsp Kashmiri red chilli powder
  29. Use 1 tbsp garlic-ginger-chilli paste
  30. You need to taste Salt
  31. Use 1 tsp cumin seeds

  34. Take For Biriyani:-
  35. You need 1/2 cup Birasta (Fried onion strips)
  36. Get 1/4 cup mint leaves, chopped
  37. Use 1/4 cup coriander leaves, chopped
  38. Provide 2 tbsp ghee
  39. Provide 1 tbsp saffron milk
  40. Use For Garnishing:-
  41. Provide 100 gms grated cheese
  42. You need 2 roasted Papad
Instructions to make Matka Biryani:
  1. For Rice- - Add whole spices, ghee, lemon juice and salt in water and bring it to boil. Add rice and let it cook at high flame until the rice grains start to float on the surface.Let it simmer on medium flame until the rice is almost cooked, which can be check by pressing a grain between fingers.Take off the flame, strain, and pour cold water immediately all over it to stop further cooking process. Remove the whole spice and keep it aside.
  2. Heat ghee and butter in a pan and add cumin seeds and let it crackle Add cashew nuts and raisins and saute for a minute. Add onion and saute till pink. Add ginger-garlic-chilli paste and saute for a min Add vegetables – carrot, peas amd french beans. Add salt. Once veggies are half-cooked, add tomato and saute. Add mixed bell peppers and saute. Add spices and mix. Once the mixture releases oil, add curd and mix well. Add paneer cubes and saute for a few minutes.
  3. In a huge pan, spread a layer of vegetable gravy Spread a layer of rice over it. Sprinkle coriander and mint leaves over it Sprinkle saffron milk over it. Spread a layer of Birasta (fried onions)Pour ghee. Repeat all the layering process and cover the pan. Heat a tawa and place the pan over it. Let it cook on slow flame for 10 minutes. Turn off the flame.
  4. Fill the cooked biryani layers in the earthen pot, garnish with roasted papad and grated cheese serve with haryali raita and sweet Paan.
